My New Car!



Introducing my NEW CAR! Well, I say new, it's new to me, it's actually 6 years old. The youngest car I've ever owned though!

And it's YELLOW! Really really yellow, this photo does not to the yellowness any justice! But it's such a sweet little car that I can forgive the colour. I don't actually have it out side my house yet sadly, I have to go and pick it up from Preston tomorrow as the garage is giving it it's MOT on Monday morning. But it is paid for it is MINE!

I have to say that dad came good yesterday. I know I winge on about him and his insane ideas about life etc, but he does love me, and every so often he comes through for me, in amazing style! The original budget of £1300 was forgoten, as he discovered (as I had, but not mentioned to him) that £1300 would only buy an old banger that would last a year or two at the most, and he'd upped it to £3000!!!!!!! This little beauty cost £2995, but dad got him down to £2795. I got to test drive it, and it feels lovely! It's a real girly car, and feel much different to the dear old mondeo, but I have to say I quite liked it! In fact, I was gutted I couldn't drive it home there and then.

There's still the matter of te insurance to sort out, it seems like when dad rang the people to re-insure the mondeo he made the information up as he went along..... dunno where he got his info from but it was all wrong! So Fay is going to call the people on Monday am and sort it all out, and get me a cover note asap so I can actually drive the new car home legally! I have to sort out my car tax on Monday too, and then I can get on with enjoying my new car!

YAY!

Recipe: Pigsty Pie

This is one that we made up, although we are far from the first or only people to make a pie using pork or pork mince and call it a Pigsty Pie. So let's just say that this is our version of it. It smells great and reminds me of stuffing at Christmas, making it feel much more "naughty" than it is! This serves four people and it a nice 9 points per serving. You will need these for the mash: 400g potatoes 400g sweet potatoes 4-5 good sized carrots Salt Pepper Nutmeg Simply chop the roots, boil in salted water until tender, and mash! Add salt, pepper and nutmeg to taste. The pie filling: 10 sprays low fat cooking spray (e.g. 1 cal) 1/2 lb lean pork mince 2 onions, finely chopped 3 apples, diced 1 leek, chopped 5-6 big mushrooms 2 tbs plain flour 1 tsp sage 1 tsp parsley Salt Pepper 1 vegetable stock cube 1/2 hot water 2 tsp English mustard Fry the onions in the cooking spray until they start to soften, add the mince. Once the meat starts to colour add the apple, leek and mush
