Over tired and hyped!

It's been another one of thse LONG days! Yup, a 5am-er..... Finally made it home at just gone 8.15pm....

I can't keep doing this!

Although, today, I feel strangly good. Possibly because I have achived a lot, or maybe because I have got not just my second wind, but have passed through that into hyper-mad-bunny-mode.

I suspect the latter.

The weather's been horrible. And driven about 300 miles just today. I tired to inspect a site in Dewsbury that wasn't ours (easy mistake to make, two nursaries next door to each other, I walked into the wrong one thinking they were one and the same). I have interviewed - at very short notice - and hired a new cleaner for one of our problems sites, then trained her (and she's good too!). Former problem cleaners (at the same site) are now doing a cracking job thanks to my input - and they seem to like me still. I just hope they carry on doing well when I'm not there to watch over them.

I also called in on mum for a couple of hours on the way past and had tea and quiche, which kept me going for the rest of the day.

I managed to get the van back to work just before it ran out of diesel (well, if they will send me off with less than a full tank and no expenses card...). Running on fumes for the last 5 or so miles, fule light blinking away. Oh well.... I left a note. And the office is right next door to a Shall Station. At least they wont have to push it far if it's that empty!

Recipe: Pigsty Pie

This is one that we made up, although we are far from the first or only people to make a pie using pork or pork mince and call it a Pigsty Pie. So let's just say that this is our version of it. It smells great and reminds me of stuffing at Christmas, making it feel much more "naughty" than it is! This serves four people and it a nice 9 points per serving. You will need these for the mash: 400g potatoes 400g sweet potatoes 4-5 good sized carrots Salt Pepper Nutmeg Simply chop the roots, boil in salted water until tender, and mash! Add salt, pepper and nutmeg to taste. The pie filling: 10 sprays low fat cooking spray (e.g. 1 cal) 1/2 lb lean pork mince 2 onions, finely chopped 3 apples, diced 1 leek, chopped 5-6 big mushrooms 2 tbs plain flour 1 tsp sage 1 tsp parsley Salt Pepper 1 vegetable stock cube 1/2 hot water 2 tsp English mustard Fry the onions in the cooking spray until they start to soften, add the mince. Once the meat starts to colour add the apple, leek and mush
