The Sun Came Out!

The sun has come back, and brought my smile and motivation with it. I really cannot function properly without enough sunlight... Monday morning and the skies were clear. It was cold though, only 1°C but cold isn't an issue. I bundled up, got Freddie all snug in his fluffy pola bear suit, and set off to meet up with my Walking Buddy. She's been low too so we both needed this.

We did over 2 miles. Not the 5+ we were doing back in November, but it was good. We also had a drink at the Juicafe juice bar (and a coffee shop coffee too). Today we did a similar length walk and had another juice. And we are both feeling better for it.

The daylight, exercise, and company has fixed my mood. The juice drinks have given me a boost - we've been drinking "Wake Me Up" which has apple, carrot, ginger & lime in. Psychosomatic or genuine? Don't know, don't care, I like it! We're thinking about going again tomorrow! I really should too because I have other commitments on Thu & Fri.

And because I'm back out & about I'm not nibbling so much. I stayed within my points yesterday, and I'm on track to do the same today (cottage pie made ready for dinner, points left over for a light snack this evening if I need it), as well as the boost of Active Points - I got 5 yesterday!

I'm not over my Winter Blues... I few rubbish weather days in a row and I'll struggle again. But in the meantime I'm working hard and looking forward to Spring!



Facebook has changed it’s policy for posts to Facebook pages like mine. They are only showing posts to a few likers unless I pay to boost the views. Since I don't earn money from my blog (or at least not much, not even enough to buy one posh a coffee a week) I wont be doing that. Recipe: Pigsty Pie

This is one that we made up, although we are far from the first or only people to make a pie using pork or pork mince and call it a Pigsty Pie. So let's just say that this is our version of it. It smells great and reminds me of stuffing at Christmas, making it feel much more "naughty" than it is! This serves four people and it a nice 9 points per serving. You will need these for the mash: 400g potatoes 400g sweet potatoes 4-5 good sized carrots Salt Pepper Nutmeg Simply chop the roots, boil in salted water until tender, and mash! Add salt, pepper and nutmeg to taste. The pie filling: 10 sprays low fat cooking spray (e.g. 1 cal) 1/2 lb lean pork mince 2 onions, finely chopped 3 apples, diced 1 leek, chopped 5-6 big mushrooms 2 tbs plain flour 1 tsp sage 1 tsp parsley Salt Pepper 1 vegetable stock cube 1/2 hot water 2 tsp English mustard Fry the onions in the cooking spray until they start to soften, add the mince. Once the meat starts to colour add the apple, leek and mush
